Ingredients

  • 2 cucumbers (chilled from the fridge)
  • juice of one lemon
  • 1 Garlic clove
  • 2 tbsp chives
  • Cayenne pepper
  • 3 tbsp olive oil
  • Salt
  • black pepper (freshly ground)
  • 500 g salmon fillet (skinless)
  • butter clarified

Instructions

    Peel the cucumbers, cut them lengthwise in half, scrape out the seeds with a teaspoon and dice into tiny cubes. Toss with lemon juice, olive oil, minced garlic, chives, salt and cayenne pepper; let rest for 10‑15 minutes.

    Cut the salmon fillet in half lengthwise and slice into long pieces. Heat 1 tbsp clarified butter in a pan and sear the salmon pieces on both sides until golden brown, about 1 minute per side. Season with salt and pepper. Plate the salmon atop the cucumber salad and serve immediately.
