Matjes Salad with Beans
In the delicious matjes salad there are two types of beans plus crispy fried bacon – perfect as a filling lunch or dinner.
Ingredients
- 200 g thick beans (frozen)
- Salt
- 500 g green beans
- 50 g seasoned turkey bacon
- 5 sprigs parsley
- 3 sprigs bean herb
- 250 g Cherry Tomatoes
- 4 Spring Onions
- 400 g matjes fillet (4 fillets)
- 4 tbsp apple cider vinegar
- 3 tbsp classic vegetable broth
- Pepper
- 1 tsp sweet mustard
- 3 tbsp Rapeseed oil
Instructions

Add the frozen bean kernels to boiling salted water and cook for 3 minutes (fresh beans take 4-5 minutes). Drain, rinse under running cold water and let drain. Press the kernels out of their skins into a salad bowl.

Wash, trim, halve the green beans and boil in salted water for 10-12 minutes. Drain, rinse under running cold water and let drain. Add to the bean kernels.

Cut bacon into fine cubes and crisp in a small non‑stick pan without oil. Drain on kitchen paper and set aside.

Wash parsley and bean herb, shake dry, pluck leaves and roughly chop.

Wash tomatoes, quarter them and add with herbs to the salad bowl.

Wash spring onions, shake dry, trim and cut diagonally into rings. Add to remaining vegetables.

Rinse matjes fillets, pat dry and cut into ~2 cm pieces. Mix under the salad ingredients.

Whisk apple cider vinegar with vegetable broth, salt, pepper, mustard and rapeseed oil in a bowl to make a dressing. Toss with the matjes‑bean salad, sprinkle bacon cubes on top and serve.
