Bean Celery Salad

Ingredients

  • 1 small can cannellini beans (white, small beans)
  • 2 stalks celery
  • 2 red onions
  • 1 small Lollo Bianco lettuce
  • 4 sprigs thyme
  • 4 tbsp olive oil
  • 4 tbsp lemon vinegar
  • Salt
  • freshly ground pepper
  • 40 g chopped pistachios
  • thyme for garnish (optional)

Instructions

    Pour beans into a sieve and rinse with cold water. Drain. Wash celery, rinse, and finely chop. Peel onions and slice into thin rings. Tear Lollo Bianco leaves into bite‑sized pieces, wash, and dry.

    Strip thyme leaves from the stems. Warm olive oil slightly, toss thyme leaves briefly in it. Mix with vinegar, salt, and pepper.

    Combine prepared ingredients with the dressing and pistachios; arrange on plates. Garnish with thyme if desired and serve.
