Matjes Salad

A fresh salad featuring marinated herring fillets with radishes, apples, onions, pickles, dill, sour cream, yogurt, white wine vinegar, trout caviar, garnished with dill and onion rings.

Ingredients

  • 6 Matjes fillets
  • 4 radishes
  • 1 small tart apple
  • 1 Shallot
  • 1 small pickled gherkin
  • 1 tbsp chopped chives
  • 200 g Sour Cream
  • 250 g yogurt
  • 2 tbsp white wine vinegar
  • Salt
  • ground pepper
  • 4 tsp trout caviar
  • chives for garnish
  • onion rings for garnish

Instructions

    Whisk together sour cream, yogurt and vinegar. Season with salt and pepper.

    Wash, trim and finely grate the radishes into the yogurt mixture. Peel the apple, quarter it, remove the core and grate the quarters into the yogurt mixture as well.

    Cut the matjes fillets across into finger‑wide strips then dice them. Peel, halve and finely chop the shallot. Dice the pickled gherkin. Combine matjes, shallot, gherkin and chives in the bowl. Season with salt and pepper. Let rest in the refrigerator for 1 hour before serving. Spoon into small bowls and top with trout caviar. Sprinkle with dill and arrange onion rings on top.
