Matjes Herring and Crab Scramble

A fresh appetizer featuring scrambled eggs with Baltic herring fillets and North Sea shrimp meat, garnished with garden cress and cucumber slices, brought to you by Spoonsparrow.

Ingredients

  • 6 Eggs
  • 6 tbsp milk
  • Salt
  • ground pepper
  • 1 tsp tomato paste
  • 2 tbsp butter
  • 1 box garden cress
  • 150 g North Sea shrimp meat
  • 4 double Baltic herring fillets
  • 4 large slices rye mixed bread
  • cucumber

Instructions

    Whisk the eggs, milk, salt, pepper, and tomato paste with a hand whisk. Heat butter in a pan and let the scramble set.

    Rinse the cress and cut from the bed. Spread the scramble over the four bread slices. Arrange two herring fillets and shrimp meat on each slice. Garnish with cress and cucumber rounds.
