Matjes Häppchen with Pepper

Fresh matjes fillets mixed with diced red and green peppers, onions, grape seed oil, lemon juice, pepper, served on pumpernickel rounds. Try this and other recipes from Spoonsparrow!
Ingredients
- 6 matjes fillets (marinated in oil)
- 0.5 red bell pepper
- 0.5 green bell pepper
- 1 Red Onion
- 2 tbsp grape seed oil
- 1 splash Lemon juice
- pepper (ground)
- 4 slices pumpernickel

Rinse the matjes fillets, pat dry and cut into small cubes. Wash the peppers, halve them, remove seeds and white membranes, then dice finely. Peel and finely chop the onion. Mix the pepper, matjes, and oil together and season with lemon juice and pepper.

Use a round cutter to cut circles (about 7 cm diameter) from the bread and top each with the matjes mixture. Arrange on a plate and serve.
