Bread Salad with Capers

Ingredients

  • 0.5 Italian white bread (Ciabatta) from yesterday
  • 50 ml olive oil
  • 2 Garlic cloves
  • 4 tbsp red wine vinegar
  • 1 yellow paprika, 1 red paprika, 1 green paprika
  • 500 g tomatoes
  • 4 tbsp small capers
  • 80 g Black olives
  • Basil
  • Salt
  • black pepper (ground)

Instructions

    Wash the paprikas, halve them, remove seeds, quarter, place skin side up on a baking sheet and roast in a hot oven (220°C fan) until the skins blister; remove, cool, peel off skins and cut peppers into strips.

    Rinse tomatoes, peel, quarter, seed and dice. Pit olives. Roughly cube bread.

    Mix oil, vinegar, pressed garlic, salt and pepper well and pour over bread; add olive flesh, capers, tomatoes, basil and peppers, mix and let stand for about 2 hours, taste and serve.
