Herring Salad with Apples

Ingredients

  • 6 pickled herring fillets (Bismarck herrings)
  • 1 onion
  • 1 sour apple
  • 2 small pickled gherkins
  • juice of 1 lemon
  • 150 g Sour cream
  • 100 g yogurt
  • 2 tsp horseradish (jarred or freshly grated)
  • 4 tbsp white wine vinegar
  • 4 Tbsp sunflower oil
  • Salt
  • black pepper (freshly ground)
  • 1 tbsp dill sprigs (finely chopped)
  • 2 hard‑boiled eggs

Instructions

    Cut the herring fillets into bite‑sized pieces, peel and finely dice the onion. Wash the apple, quarter it, remove the core, then roughly cube it and drizzle with 1 tbsp lemon juice.

    Peel the eggs, separate the whites and dice them, set the yolks aside and crumble them.

    Whisk together sour cream, yogurt, horseradish, vinegar and oil; season with salt, pepper and remaining lemon juice, then stir in dill. Mix all salad ingredients (except the egg yolks) with the dressing and let rest for a few hours. When serving, sprinkle the crumbled yolks over the salad.
