Matcha Sesame Cookies

Ingredients
- 3 eggs
- 125 g powdered sugar
- 50 g flour
- 0.5 tsp Baking powder
- 50 g coconut flakes
- 1 tsp matcha tea powder
- 1 pinch salt
- 40 g sesame seeds

Separate the eggs and whisk the yolks with the powdered sugar until white and creamy. Mix the flour with the baking powder, coconut flakes, and matcha, then fold into the egg mixture. Whisk the egg whites with the salt until stiff peaks form, then gently fold into the batter.

Preheat the oven to 180°C (356°F) with both fan and top heating. Line a baking tray with parchment paper.

Using a teaspoon, drop small portions of dough onto the tray at spaced intervals. Sprinkle sesame seeds on top and bake for 10-15 minutes until lightly golden brown. Remove from the oven, lift the cookies off the paper, and let them cool.
