Green Tea Berry Cats

Ingredients

  • 90 g butter
  • 80 g ground almonds
  • 25 g wheat flour type 1050
  • Salt
  • 1 tsp matcha powder
  • 0.25 tsp baking powder
  • 200 g powdered sugar from raw cane sugar
  • 4 egg whites
  • 2 tbsp freeze‑dried raspberries
  • 3 tbsp Lime juice

Instructions

    Melt the butter in a small saucepan and let it cool slightly. Lightly brush small cat-shaped cookie molds with some of the butter.

    Mix almonds, flour, salt, matcha powder, baking powder, and 100 g powdered sugar. Fold in egg whites and remaining butter. Spoon about 1 tsp of dough into each mold and bake in a preheated oven at 200 °C (fan 180 °C; gas: level 3) for about 10 minutes. Then let cool in the molds for about 5 minutes, remove, and set on a wire rack to finish cooling.

    Meanwhile, finely chop the raspberries with a food processor. Whisk the remaining powdered sugar with lime juice to make a glaze and brush it over the cats. Sprinkle with raspberries and allow to dry.
