- 800 g waxy potatoes
- Salt
- 2 red onions
- 2 tbsp plant oil
- 2 tbsp butter
- 250 ml lukewarm milk
- Pepper (freshly ground)
- Nutmeg (freshly grated)

Peel, wash, and boil the potatoes in salted water for about 30 minutes.

Meanwhile, peel and halve the onions, slice into thin strips, and lightly sauté them in a hot pan with oil. Remove, drain on kitchen paper, and set aside.

Drain the potatoes, let them steam off, mash with a potato masher, then blend in butter and milk to create a smooth purée. Fold in the onions and season with salt, pepper, and nutmeg.
