Mashed potatoes with okra
A comforting side dish featuring creamy mashed potatoes paired with sautéed okra pods, inspired by Spoonsparrow.
Ingredients
- 500 g okra pods
- 2 tbsp salt
- 4 tbsp vinegar
- 2 Garlic cloves
- 800 g waxy potatoes
- 3 tbsp oil
- 300 g yogurt
- Salt
- pepper, freshly ground
- sugar
- 4 tbsp scallion greens (thin rings)
Instructions

Wash and trim the okra, then mix with salt and vinegar in a bowl; cover and let sit for 30 minutes before draining.

Peel the potatoes and roughly chop them; peel and coarsely chop the garlic. Boil both in salted water for about 25 minutes. Drain, add 2 tbsp oil and yogurt, and mash with a potato masher into a loose purée. Season with salt and pepper, adding more liquid if needed.

Heat 1 tbsp oil in a pan and sauté the okra briefly while stirring; season with salt, pepper, and a pinch of sugar. Add one cup of water, bring to a boil, then cover and simmer over low heat for about 10 minutes.

Serve the mashed potatoes and okra pods in small bowls, garnished with scallion rings.
