Halibut on Vegetable Bed

Ingredients
- 650 g halibut fillet
- 1 tbsp Lemon Juice
- 1 bunch spring onions
- 2 green bell peppers
- 1 red bell pepper
- 500 g tomatoes
- 1 tbsp capers
- 40 g pitted green olives
- 0.5 cup dry white wine
- 4 tbsp olive oil
- Salt
- ground black pepper
- parsley
Instructions

Season the fish with salt and pepper and drizzle with lemon juice.

Wash, trim, halve, seed, remove all white membranes from bell peppers and dice them.

Wash, trim, quarter, seed tomatoes and cut into cubes.

Wash, trim spring onions and slice into rings; break thicker pieces into smaller chunks. Set aside some green parts.

Slice olives into rounds and set aside 1 tbsp.

Sauté the vegetables in a large pan with hot oil for 2-3 minutes while stirring, season with salt and pepper. Add wine, place fish on top of vegetables, cover and cook over low heat for 10-15 minutes.

Serve sprinkled with capers, olive slices, spring onion ribbons and parsley leaves.
