Ingredients

  • 60 g almond flakes
  • 300 g mascarpone
  • 200 g crème fraîche
  • 150 g lemon curd
  • 250 g raspberries
  • liquid honey (as desired)
  • 1 untreated lime

Instructions

    Roast the almonds in a dry pan until golden brown and fragrant. Remove and let cool.

    Whisk the mascarpone with the crème fraîche. Briefly fold in the lemon curd; do not fully incorporate, then divide into 10 shot glasses. Sift the raspberries, rinse and pat dry on paper towels. Place them in a bowl and mash roughly with a fork, sweetening with honey to taste. Spoon the mixture over the cream and sprinkle with almonds. Slice the lime thinly and garnish the dessert glasses with the slices.
