Ingredients

  • 2 Organic lemons
  • 250 g sugar
  • 60 g Butter
  • 3 eggs

Instructions

    Wash the lemons, grate the zest and squeeze out the juice. In a metal bowl beat the butter and sugar until fluffy. Add the eggs and stir in.

    Place the bowl over a simmering water bath and add the lemon zest and juice, stirring until the mixture thickens and becomes slightly translucent. This takes about 30 minutes. Transfer to a glass jar and store in the refrigerator. It pairs well with scones, shortbread pastries, and muffins.
