Ingredients

  • 5 untreated lemons
  • 125 g butter
  • 150 g sugar
  • 3 egg yolks
  • 2 Eggs

Instructions

    Wash the lemons hot, finely grate the zest and then juice all fruits.

    Cut the butter into cubes and add it with the zest, 250 ml of lemon juice, sugar, egg yolks and eggs to a metal bowl; heat over a simmering water bath.

    Stir until a creamy consistency is reached (about 8 minutes). Strain through a fine sieve, pour immediately into sterilized jars and let cool.
