Ingredients
- 250 g mascarpone
- 200 g cream cheese (low-fat optional)
- Salt
- white pepper (ground)
- 1 tbsp Lemon Juice
- 16 nasturtium flowers
- 0.5 bunch chives (rolled into spirals)
- 12 chive strands
- 24 peppercorns
- 24 almond slivers
- a handful wild garlic leaves

Whisk mascarpone with cream cheese, lemon juice, salt and pepper until smooth and season to taste. Gently pat the nasturtium flowers dry. Distribute the chive spirals on four plates. With two tablespoons per plate, form three large nibbles from the mascarpone mixture and place them atop the chive spirals.

Insert a sprig as a tail into each mouse, use peppercorns for eyes and almond slivers for ears. Garnish the plate with nasturtium flowers and wild garlic leaves and serve the mice with bread.
