Small Peppers with Dip

Ingredients

  • 300 g baby bell peppers (in various colors)
  • 100 g pimento
  • 8 tbsp olive oil
  • 12 anchovy fillets
  • 1 Garlic clove
  • Pepper (freshly ground)

Instructions

    Preheat the oven to 200°C fan-forced.

    Wash and pat dry the pepper halves. In a hot, ovenproof pan, sear in 4 tbsp oil. Transfer the pan to the oven and bake for about 15 minutes.

    For the dip, pat the anchovies dry and set aside two for garnish. Place the rest in a small saucepan. Add the remaining oil and squeeze in the peeled garlic. Simmer gently, stirring until the anchovies break down and the dip becomes creamy. Season with pepper and transfer to a small bowl. Top with the reserved anchovies.
