Ingredients

  • 2 tbsp capers
  • vegetable oil (for frying)
  • 2 Eggs
  • 2 Bismarck herrings (double fillets)
  • 1 small red onion
  • 2 pickles
  • 1 tsp sharp mustard
  • 1 tsp Honey
  • 2 tbsp lemon juice
  • 2 tbsp sunflower oil
  • Salt
  • pepper (ground)
  • 1 slice dark rye bread (large)
  • 10 g butter
  • 1 tbsp chives

Instructions

    Pat the capers dry and briefly fry them in hot oil until crisp. Drain on kitchen paper.

    Boil the eggs for about 10 minutes, then shock, peel, and cut lengthwise in half. Pat the herrings dry and cut into eight pieces.

    For the sauce, peel, quarter, and slice the onion. Cut the pickles into small pieces. Whisk mustard with honey, lemon juice, oil, salt, and pepper; fold in onion and pickle and taste.

    Cut the bread into four wide strips and spread with butter. Top each strip with an egg half and two fish pieces. Drizzle dressing over and sprinkle with chives and capers before serving.
