Ingredients

  • 500 g mascarpone
  • 2 tbsp sugar
  • 2 tsp Bourbon vanilla powder
  • 1 tbsp raspberry liqueur
  • 125 g red currants
  • 250 g raspberries
  • 125 g blackberries
  • 250 g blueberries
  • 2 tbsp black currant jelly
  • 40 ml currant juice
  • 1 unprocessed orange
  • 40 g shelled pistachios
  • 1 tbsp powdered sugar

    Whisk the mascarpone with the sugar, vanilla powder and liqueur into a loose cream and chill. Wash the currants and strip them from their stems. Clean the raspberries, blackberries and blueberries.

    For the dressing whisk together the black currant jelly, currant juice and orange juice until smooth. Spread the dressing over the berries, gently mix and let rest for about 30 minutes. Fill the mascarpone cream into four glasses, serve with the berry salad and garnish with pistachios and powdered sugar.
