Jam Cookies

Ingredients
- 225 g butter
- 200 g sugar
- 2 tbsp vanilla sugar
- 0.5 tsp cinnamon
- 1 pinch Cardamom
- 1 egg
- 2 egg yolks
- 225 g ground almonds
- 375 g flour
- flour (for dusting)
- 200 g blackberry jam (or currant jam)
- powdered sugar (for dusting)
Instructions

Beat the butter with the sugar and vanilla sugar until fluffy. Stir in cinnamon, cardamom, and then add the eggs one at a time. Add the almonds and nuts and knead into a smooth dough. Wrap in cling film and chill for about 30 minutes.

Preheat the oven to 180°C fan. Line a baking tray with parchment paper.

Roll out the dough on a floured surface to 2-3 mm thickness. Cut out hearts, then cut smaller hearts from half of them. Place on the tray and bake in the oven for 6-8 minutes until golden brown. Carefully remove from the tray and while still warm spread smooth jam over the hearts. Place a 'window' heart on top and press lightly. Let cool and dust with powdered sugar.
