Tiramisu with Rhubarb and Strawberries

A delicious tiramisu variation with a fruity filling

Ingredients

  • 250 g strawberries
  • 250 g rhubarb
  • 50 ml strawberry syrup
  • water
  • 100 g sugar
  • 100 g ladyfingers
  • 60 ml orange liqueur
  • 500 g mascarpone
  • 250 g quark
  • 2 tbsp vanilla sugar
  • 30 g chopped pistachios
  • 150 g strawberries (sliced)

Instructions

    Rinse, wash and remove stems from the strawberries. Wash, peel, cut the rhubarb into pieces and simmer with strawberry syrup and water until tender. Slice the strawberries and sweeten them with about half of the sugar. Line a baking dish with one-third of the ladyfingers and drizzle them with 2 cl orange liqueur; spread one-third of the strawberry mixture over them.

    Whisk mascarpone with quark and the remaining sugar, then add another third of the mixture on top; repeat this process twice more, finishing with cream, smoothing it. Arrange sliced strawberries in a fan shape and sprinkle with pistachios. Chill for at least an hour before cutting into pieces and serving.
