Ingredients

  • 400 g marzipan
  • 150 g powdered sugar
  • 2 pieces candied orange peel
  • 2 tsp cocoa powder
  • red food coloring
  • 5 g chocolate
  • 0.5 tsp chopped pistachios
  • 1 piece gold leaf
  • 100 g white couverture chocolate
  • 100 g dark couverture chocolate

Instructions

    Knead the marzipan with powdered sugar. From ¾ of the mixture form two large and small balls for body and head. Roll a body ball in cocoa. Additionally, shape two bulges to connect head and body. Stack these balls and secure them with a thin marzipan bulge. Cut the candied orange peel into small noses.

    Melt the coverages separately in a double boiler.

    For the cylinder hat, color a piece of marzipan with cocoa and shape it into a hat. Brush the body with white couverture, the head with dark coverage, and let dry. Attach nose and hat while chocolate is still wet. Tap buttons with dark chocolate.

    Melt chocolate for the hat and pour onto parchment paper to form a circle; let set slightly and decorate with gold leaf and pistachios. For the apron, roll marzipan 3 mm thick and cut into wavy shapes. Dip the head in white chocolate and place the dried hat on top. Glue the apron with a bit of melted chocolate. Form a bulge for a necklace and loop it around the neck. Color some marzipan with red food coloring, shape into small gemstones, and attach them to the necklace with chocolate.
