Baked Apples

Ingredients
- 2 tbsp butter
- 4 Boskop apples
- 40 g ground hazelnuts
- 1 tbsp apple jelly
- 1 tbsp whipping cream
- 1 tbsp honey
- 0.5 tsp cinnamon powder
- 250 ml milk
- 250 ml Whipping Cream
- 1 Vanilla bean
- 5 egg yolks
- 100 g sugar
Instructions

Wash, dry, and core the apples. Place them in a greased baking dish.

Mix nuts with cream, apple jelly, honey, and cinnamon; fill the apples. Top with butter shards and bake at 180°C (medium) for about 30 minutes until soft. Serve with vanilla sauce.

Whisk milk and cream with the vanilla bean and scraped seeds; bring to a boil.

Beat egg yolks with sugar until creamy. Stir the hot cream-milk into the yolk mixture, pour everything back into the pot, and whisk over low heat until thickened into a sauce—do not let it boil.

Strain the vanilla sauce through a sieve, cool slightly, dust the surface lightly with sugar to prevent skin formation.
