Marinated Zucchini

Marinated zucchini with mint and honey: the refreshing aroma of this antipasto-style zucchini will delight you.

Ingredients

  • 3 sprigs Mint
  • 0.5 lemon
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 750 g zucchini (3 zucchinis)
  • Salt
  • Pepper

Instructions

    Wash and pat dry the mint.

    Remove leaves and roughly chop them; squeeze out the juice of the lemon.

    Whisk together 2 tbsp lemon juice, honey, and 1 tbsp oil with the mint.

    Clean, wash, and pat dry the zucchini; slice diagonally into about 1 cm thick rounds.

    Heat a grill pan and brush it with the remaining oil. Grill the zucchini slices for 2-3 minutes on each side. Transfer to a bowl and season with salt and pepper.

    Pour the dressing over the hot zucchini slices, mix well, and let marinate for at least 1 hour. Taste again before serving.
