Ingredients

  • 1 kohlrabi
  • 1 piece yellow-fleshed pumpkin (ca. 200 g)
  • 1 bunch spring onions
  • 200 g soy sprouts
  • 3 tbsp soy oil
  • Salt
  • 2 tbsp Mirin
  • 50 ml Vegetable broth
  • 2 tuna steaks (each 200 g)
  • Pepper (freshly ground)
  • 2 tbsp Soy sauce
  • 0.5 tsp liquid honey
  • 3 tbsp sesame seeds
  • herbs for garnish

Instructions

    Clean the kohlrabi and cut into very long, thin strips. Cut the pumpkin flesh into long, thin strips or shave it. Clean the spring onions, wash them, slice the green part lengthwise, chop the white part. Wash the sprouts and drain.

    Sauté the vegetables in 1-2 tbsp soy oil, season with salt, then pour in mirin and 2 tbsp vegetable broth. Cover and steam for about 5 minutes.

    Season the tuna steaks with pepper, quickly sear them on both sides in the remaining oil over high heat.

    Stir the soy sauce with honey, pour over the tuna steaks, let sit briefly, then sprinkle sesame seeds, cut into cubes, and skewer individually. Arrange on plates with vegetables and garnish with herbs as desired. Serve with extra soy sauce.
