Ingredients

  • 1 Sweet Potato
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • 4 eggs
  • 2 Avocados
  • 50 g cream cheese

Instructions

    Peel the sweet potatoes and slice them lengthwise into about 1 cm thick slices. Drizzle with olive oil, season with salt and pepper, and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2‑3) for 10–15 minutes.

    Meanwhile bring a pot of water to boil and cook the eggs for 10 minutes. Halve the avocados, remove the pits, scoop out the flesh, and slice lengthwise into thin strips.

    Remove the sweet potato slices from the oven and let them cool slightly. Then spread cream cheese over each slice.

    Arrange avocado slices on top and grate the cooked egg over them. Season with salt and pepper and serve.
