Marinated sardines in oil

Ingredients
- 700 g fresh sardines
- 150 ml sherry vinegar
- 10 garlic cloves
- 1 bunch parsley
- Salt
- pepper (from grinder)
- 250 ml olive oil
Instructions

Slice each sardine along the belly, loosen the bones on both sides with your thumb, and remove the head.

Wash the sardines, pat them dry, and place them in a baking dish.

Mix sherry vinegar with 250 ml water and pour over the sardines; let stand for about 1 hour.

Peel the garlic and finely chop it; roughly tear the parsley leaves.

Discard the vinaigrette. Rinse the sardines under water, pat dry, return to the dish, season with salt and pepper, sprinkle with garlic and parsley, drizzle olive oil over them, and let sit for another hour.
