Marinated Mushroom Skewers
Marinated mushroom skewers with European cultivated mushrooms taste wonderfully aromatic. The recipe is available here at Spoonsparrow.
Ingredients
- 300 g small brown button mushrooms (or mixed mushrooms)
- 2 red onions
- 6 tbsp Olive oil
- 2 tsp mustard
- 1 tsp Sweet paprika powder
- 1 tsp Dried oregano
- Salt
- Pepper
- 200 g pasta of choice (e.g., spiral noodles or orecchiette)
- 200 g Cherry tomatoes
- 0.5 cucumber
- 2 Spring Onions
- 100 g green olives (pitted)
- 1 handful parsley
- 150 g feta cheese (45% fat in total)
- 2 tbsp light balsamic vinegar
- 1 tsp Honey

Soak wooden skewers in water. Clean mushrooms and cut them in half according to size. Peel onions, halve them, and break into large pieces. In a bowl combine 4 tbsp olive oil, 1 tsp mustard, paprika, oregano, salt, and pepper. Marinate mushrooms and onions in the mixture for at least 10 minutes.

Cook pasta according to package instructions in boiling salted water until al dente (about 9–11 minutes). Drain and set aside. Meanwhile wash tomatoes and halve them, peel cucumber, wash it, dice into cubes, clean spring onions, wash, and slice into rings; cut olives in half. Wash parsley, shake dry, and chop. Cut feta into small cubes or crumble roughly.

For the dressing whisk remaining olive oil with balsamic vinegar, leftover mustard, honey, salt, and pepper. Toss cooled pasta with prepared vegetables, feta, and dressing.

Thread marinated mushrooms and onions alternately onto skewers. Cook marinated mushroom skewers in a hot grill pan or regular pan over medium heat for about 8–10 minutes on all sides until mushrooms are nicely browned and onions are soft. Serve warm marinated mushroom skewers with the colorful pasta salad.

Tip: For a brunch buffet, thread mushrooms and onions onto smaller skewers and serve marinated mushroom skewers with the pasta salad in glasses.
