Ingredients

  • 8 salted herrings (extracted)
  • 1 untreated lemon
  • 1 sprig rosemary
  • 1 tsp white peppercorns
  • 300 ml white wine vinegar (or fruit vinegar)
  • 1 tbsp sugar
  • 1 tbsp salt

Instructions

    Soak the salted herrings for at least 12 hours, then rinse thoroughly and remove any scales if necessary. Cut off heads, fillet, and remove the central spine. Rinse the fish fillets again and let them drain.

    Peel the zest of the lemon and squeeze out the juice. Place the zest with the fish, trimmed rosemary, and peppercorns in a jar. Boil the vinegar with 200 ml water, lemon juice, sugar, and salt, then allow to cool. Pour over the herrings, seal, and refrigerate for at least 2 days.
