Orientally Spiced Sea Bream Rolls with Vegetable Strips

Ingredients
- 2 tbsp sesame seeds
- 1 tbsp peanut oil
- 1 tbsp Sesame oil
- 1 hazelnut-sized piece ginger
- 3 cloves garlic
- 3 spring onions
- 1 lemon (juice)
- 1 tbsp soy sauce
- 700 g sea bream fillet (skinless)
- 1 Carrot
- 1 Zucchini

Toast sesame 1-2 min in a not too hot pan. Transfer to a bowl, set aside. Add peanut and sesame oil to the pan. Peel and finely chop ginger and garlic; sauté in oil. Add to the sesame mixture in the bowl. Trim and finely slice spring onions; combine with lemon juice and soy sauce, then mix with the sesame-ginger-garlic blend.

Peel carrot and zucchini; use a vegetable peeler to create long, thin strips. Briefly blanch the strips and set them warm as a veggie bed.

Lightly oil the bottom of a bamboo steamer or sieve insert and place over a pot of boiling water.

Split sea bream fillets lengthwise, season with salt and pepper from a grinder. Spread 3/4 of the sesame mixture on the fillets and roll them up. Place the rolls in the steamer and top with the remaining sesame mixture. Steam covered for 6-7 minutes. The fish is done when it is no longer translucent but white.

Serve on a bed of the prepared carrot and zucchini strips.
