Ingredients
- 300 g glass noodles (or rice noodles)
- 300 g shrimps (frozen)
- 30 g ginger (fresh)
- 2 cloves garlic
- 1 bunch Thai basil
- 400 ml coconut milk
- 4 tbsp sesame oil
- Salt
- 2 tbsp Light soy sauce
- 1 tbsp fish sauce
- 2 tbsp freshly chopped coriander leaves

Soak the glass noodles in a bowl with warm water and let them swell for about 20 minutes.

Meanwhile, thaw the shrimp. Peel the ginger and garlic, wash the basil, shake it dry, and finely chop everything together.

Heat 2 tbsp oil in a wok and sauté the ginger with the garlic. Add the coconut milk and bring to a boil. Add the basil and let simmer for 3-4 minutes.

In the meantime, fry the shrimp in the remaining oil for 1-2 minutes. Add the glass noodles to the shrimp, season with salt, soy sauce, and fish sauce. Divide the shrimp noodles into four bowls.
