Ingredients
- 4 herring fillets
- 2 onions
- 2 pickled cucumbers
- 1 apple
- 300 ml hot vegetable broth
- 2 tbsp white wine vinegar
- 2 tbsp white wine
- Salt
- 1 tsp black peppercorns
- 2 Bay leaves
- 1 tsp mustard seeds
- 2 tbsp oil

If desired, rinse the herring fillets briefly and pat dry. Peel the onions and slice into thin rings or half-rings. Slice the pickled cucumbers into thin slices. Peel the apple and dice it small. Place half of the onion, cucumber, and apple cubes in a bowl, lay the fish fillets on top, and distribute the remaining vegetables over them.

Whisk the hot broth with all other ingredients to make the marinate and pour over the fish fillets. Allow the herring fillets to marinate for 1–2 hours.
