A refreshing avocado cucumber salad with peach and Gorgonzola – perfect for a quick, healthy after-work meal made with fresh ingredients.

Ingredients
- 1 small organic cucumber
- 1 Avocado
- 2 tbsp lemon juice
- 1 small stalk of leek
- 2 tbsp pickled pepper (drained)
- 1 can peaches
- 4 tbsp olive oil
- 4 tbsp white balsamic vinegar
- Salt
- 250 g blue-veined cheese
Instructions

Wash the cucumber, pat dry and slice thinly. Halve the avocado, remove the pit, cut into wedges and peel off the skin. Drizzle the avocado wedges with lemon juice. Wash the leek and slice into thin rings. Drain the pickled pepper. Drain the peaches and slice thinly. Combine all ingredients together. Mix in olive oil, vinegar and salt to taste. Cube the cheese, fold it in and adjust seasoning.
