Marinated cucumbers from Spoonsparrow – a refreshing, spicy treat that makes the perfect snack or side for many dishes.

Ingredients

  • 2 kg firm salad cucumber
  • 150 g salt
  • 3 sprigs dill
  • 1 tbsp red peppercorns
  • 1 untreated lemon
  • 350 ml white wine vinegar
  • 100 g cane sugar

Instructions

    Rinse canning jars thoroughly with hot water and boil them in a large pot for about 10 minutes. Before use, ensure the jars are completely dry.

    Wash cucumbers, pat dry, and cut lengthwise into quarters. Mix with salt and let sit overnight in a cool place. Then rinse thoroughly and drain well.

    Fill jars with the drained dill and peppercorns. Wash lemon hot, pat dry, and slice. Boil about 350 ml water, vinegar, and cane sugar, then pour over the cucumbers. Seal jars immediately. Let marinated cucumbers mature for about two weeks in a cool, dark place before opening.
