Marinated Chicken with Leeks

Ingredients
- 600 g Chicken breast fillet
- 2 tbsp peanut oil
- 1 tsp tomato paste
- 50 ml soy sauce (light)
- Salt
- Pepper
- 1 tsp ginger (finely chopped)
- 4 onions
- spicy sauce
- 2 tbsp butter
- 1 tsp sugar
- 3 very thin stalks of leek (or substitute with spring onions)
Instructions

Cut chicken breasts into bite‑size pieces. Mix tomato paste with soy sauce, salt, pepper and ginger, then marinate the meat for at least 15 minutes.

Meanwhile peel onions and cut them in half‑rings. Clean leeks or spring onions and slice diagonally into pieces.

Heat butter in a pan and brown onions until golden yellow; sprinkle sugar over them and caramelize to light brown. Add leeks and sauté briefly.

At the same time drain the meat, pour the marination over the onions and let it sit at low temperature. Quickly sear the meat in a hot wok with oil all around, add the onion mixture and cook for 5–8 minutes until done.

Taste, fill preheated bowls and serve.
