Marinated Chicken Skewers

Ingredients
- 600 g chicken breast fillet (prepped, skinless)
- 2 cloves garlic
- 0.5 diced onion
- 0.5 tsp chopped lemongrass
- 1 pinch ground anise
- 1 pinch ground coriander
- 1 pinch ground cumin
- 2 tbsp Light soy sauce
- 4 tbsp Coconut Milk
- 2 tbsp oil
- Salt
- black pepper (freshly ground)
- 150 g unsalted, peeled peanuts
- 200 ml coconut milk
- 2 tbsp peanut butter
- 1 tsp curry powder
- a splash lemon juice
- a pinch sugar

Wash the meat, pat dry and slice lengthwise into thin strips. Mix the remaining ingredients; peel and finely chop the garlic cloves and fold in. Marinate the meat slices for 2 hours.

Meanwhile, for the peanut sauce roast the peanuts without oil in a pan, let cool, then crush finely in a mortar. Boil coconut milk, peanut butter and curry powder in a pot, stir in crushed peanuts and season with lemon juice and sugar. If needed, reduce further or add a little water. Spoon into bowls and sprinkle chopped peanuts on top.

Thread the drained meat slices onto wooden skewers in a wave pattern. Place on a rack and grill over high heat, turning occasionally for about 10 minutes. Brush with the remaining marinades during grilling. Serve plated with sauce.
