Marinated Asparagus

Ingredients
- 1 kg white asparagus
- 1 box of watercress
- 8 radishes
- 1 lemon
- Salt
- a pinch of sugar
- 4 tbsp oil
- 4 tbsp white wine vinegar

Squeeze the lemon, bring water with lemon juice, salt and sugar to a boil and cook the asparagus in it for about 18 minutes. Remove and place in an appropriate small bowl. Pour 2 cups hot asparagus broth over it and add vinegar and oil.

Let it steep overnight in the refrigerator if possible. Slice radishes into thin slices, then into strips. Trim the watercress with scissors. Arrange the asparagus, drizzle some of the dressing over it, and sprinkle watercress and radish strips on top.
