- 1 kg green asparagus
- Salt
- 120 g pancetta (sliced)
- 2 tbsp olive oil
- pepper (ground)
- 2 tbsp lemon juice
- 4 tbsp freshly grated Parmesan

Peel the lower third of the asparagus and cook the spears in salted water for about 10 minutes. Shock them in ice water and drain well. Wrap each spear with 1-2 slices of pancetta and fry in hot oil until golden brown, about 5 minutes per side. Season with pepper and a touch of salt, then deglaze with lemon juice and a splash of water.
