Ingredients

  • 80 g chopped almonds
  • 2 tbsp breadcrumbs
  • 20 g butter
  • 2 tbsp sugar
  • pinch of cinnamon powder
  • sugar‑cinnamon mixture (for sprinkling)
  • 600 g starchy boiling potatoes
  • Salt
  • 2 tbsp sugar
  • 0.5 vanilla bean (pulp)
  • 100 g flour
  • 50 g semolina
  • 4 tbsp soft butter
  • 1 egg yolk
  • 12 small apricots
  • 12 pieces cube sugar

Instructions

    Wash the potatoes and boil them in salted water for about 25 minutes, then drain, peel, and press into a bowl. Let the potato mash cool. Add a pinch of salt, sugar, vanilla, flour, and semolina to the potatoes and mix. Quickly knead in the soft butter and egg yolk with your hands; if needed, add a little more flour.

    Divide the dough into 12 pieces and shape each into a ball. Wash the apricots, cut them open on one side, remove the pits, and insert one cube sugar piece into each. Flatten the dough balls slightly, wrap the apricots in the dough, and reshape into dumplings again.

    Bring a large pot of lightly salted water to a boil, add the dumplings, and simmer for 10–15 minutes until cooked through.

    Brown the almonds with breadcrumbs, butter, sugar, and cinnamon in a small pan until just golden. Transfer to a plate. Lift the dumplings from the water with a slotted spoon, drain well, and roll them in the almond mixture. Arrange on plates and sprinkle with cinnamon‑sugar before serving.
