Mangotarte

Ingredients
- 250 g flour
- 100 g sugar
- 1 Tbsp vanilla sugar
- a pinch of salt
- 1 egg
- 150 g butter
- flour (for the work surface)
- legumes (to sprinkle)
- 4 ripe mangoes
- 150 g lime jam

Mix the flour with the sugar, vanilla sugar and salt for the dough; on a work surface form a mound, press a well in the middle, crack the egg into it and scatter butter pieces around the well. Quickly knead by hand into a smooth dough, shape into a ball and wrap in cling film to chill in the refrigerator for 30 minutes.

Preheat the oven to 180°C (convection).

Roll out the chilled dough on a floured surface slightly larger than the tart pan, line the pan with buttered dough. Cover with parchment paper, sprinkle legumes on top and bake blind for about 25 minutes in the preheated oven.

Meanwhile peel the mangoes, cut the flesh off the stone into thin strips and mix immediately with lemon juice. Warm the lime jam in a saucepan until it melts.

Remove the crust from the oven, lift out the parchment and legumes, let the base cool. Transfer to a serving plate, arrange mango strips over the base and spread the melted jam on top. Serve on a cake stand.
