Ingredients

  • 250 g flour
  • 1 egg yolk
  • 1 tsp salt
  • 125 g butter
  • butter (for the molds)
  • flour (for working)
  • 8 figs
  • 4 slices goat cheese roll
  • 8 tsp honey
  • rosemary (for garnish)

Instructions

    Knead the flour with the butter, egg yolk and salt into a smooth dough, adding 1-2 tbsp cold water if needed. Wrap in cling film and chill for about 1 hour. Preheat the oven to 200°C (400°F) fan‑fry. Butter eight small tartlet molds (about 5 cm) and line with rolled out shortcrust pastry on a floured surface. Bake in the preheated oven for 15-20 minutes, then let cool.

    Wash the figs, cut a shallow cross from the top and gently press the fruit apart. Halve the cheese slices. Place the figs into the molds on the pastry bases, insert half a cheese slice into each fig and drizzle with honey. Raise the oven to grill mode and broil for 5–8 minutes until golden. Let cool slightly, lift out of the molds and garnish with rosemary sprigs.
