Ingredients

  • 60 g cashew nuts
  • 1 stalk mint
  • 1 Mango
  • 1 tbsp honey
  • 2 tsp lemon juice
  • 200 ml coconut milk
  • 400 g yogurt
  • 1 handful ice cubes

Instructions

    Roast the cashew nuts briefly in a pan, then let them cool. Roughly chop afterward.

    Rinse the mint and pluck the leaves. Peel the mango and cut the flesh away from the pit. Blend the mango, mint, honey, lemon juice, coconut milk, and ice cubes until creamy. Fold in half of the nuts and yogurt (do not blend further) and thin with about 150 ml water if needed. Pour into glasses and sprinkle with remaining nuts before serving.
