Strawberry Parfait Cubes

Ingredients

  • 2 egg yolks
  • 65 g powdered sugar
  • 0.5 untreated lemon
  • 1 cup heavy cream
  • 1 packet vanilla sugar
  • 500 g strawberries
  • 20 thin chocolate squares
  • 1 tbsp orange liqueur
  • powdered sugar (for dusting)
  • mint for garnish

Instructions

    Place a square pan with a 3/4‑liter capacity in the freezer. Whisk the egg yolks, 50 g powdered sugar and 2 tsp lemon juice over a water bath until thick and frothy, then grate some lemon zest into it. Wash, drain and stem 400 g strawberries; reserve 100 g for later and puree the rest. Stir the strawberry purée into the egg cream. Dice the reserved 50 g strawberries into small cubes and fold them in.

    Beat the heavy cream with vanilla sugar until stiff peaks form, then fold it into the strawberry‑cream mixture. Pour a ~1 cm layer of strawberry‑cream into the chilled pan, lay chocolate squares on top, then alternate layers of strawberry‑cream and chocolate until all ingredients are used, ensuring the final layer is chocolate. Freeze for at least 4 hours.

    About half an hour before serving, blend the remaining strawberries with the leftover 15 g powdered sugar and a splash of lemon juice until smooth, then flavor with orange liqueur. Remove the parfait from the freezer, let it soften slightly, then break it out of the pan. Cut the parfait into pieces matching the size of the chocolate squares. Arrange the cubes on a powdered‑sugar dusted plate, drizzle with strawberry sauce and garnish with mint.
