Mango Rhubarb Ice

Ingredients
- 1 mango (flesh)
- juice of 1 lemon
- 120 g sugar
- 500 g rhubarb
- 1 vanilla sugar packet
- 125 ml red grape juice
- 3 tbsp Lemon juice

Blend the mango flesh in a blender and strain through a sieve.

Cook 50 g sugar with 2 tbsp water until syrupy, then cool and mix with the puree and lemon juice.

Clean and cut the rhubarb into pieces. Combine with remaining sugar, vanilla sugar, grape juice, and lemon juice in a pot; cover and simmer for about 10 minutes until tender. Then purée, strain through a fine sieve, and let cool.

Freeze the mixtures while stirring occasionally to prevent large crystals from forming.

When the mixtures are half frozen, pour rhubarb ice first, then mango ice, and finally another layer of rhubarb ice into small stick molds. Insert a plastic or wooden stick in the center and freeze until firm.
