Mango Mousse Basic Recipe

Ingredients

  • 150 g Strawberries
  • 2 tsp sugar
  • 1 sheet white gelatin
  • 1 Mango
  • 5 tsp lime juice
  • 100 ml whipping cream (35% fat)
  • Lemon balm (for garnish)

Instructions

    Wash strawberries, pat dry and set aside two for garnish. Quarter the remaining berries, sprinkle with sugar and let sit in a bowl. Soak gelatin in cold water.

    Peel mango, cut flesh from the hard core and dice. Puree and strain through a sieve. Squeeze out excess liquid from gelatin and dissolve it in a small pot with a little water.

    Stir 1 tbsp mango mousse into the gelatin, then fold into the remaining mango mixture and season with lime juice. Whip cream to stiff peaks with an electric mixer and fold into the mixture. Chill for at least one hour. Serve mango mousse garnished with strawberries and lemon balm.
