Mango Curry Sauce

Ingredients

  • 0.5 Mango (about 250 g flesh)
  • 1 Shallot
  • 1 tbsp butter
  • 1 tbsp curry powder
  • a pinch ground cumin
  • 150 ml Vegetable broth
  • 200 ml coconut milk
  • 1 tbsp mango chutney
  • 2 Tbsp capers (jar)
  • Salt
  • Pepper
  • 2 tbsp lemon juice

Instructions

    Dice the mango flesh into small cubes. Peel and finely dice the shallot. In a pot, sauté in hot butter until translucent.

    Sprinkle curry powder and cumin over the shallots and deglaze with vegetable broth. Add coconut milk, stir in chutney, and simmer gently for about 10 minutes.

    Blend the mango curry sauce until smooth and strain through a sieve. Fold in capers and season with salt, pepper, and lemon juice.
