Spanish Tortilla

Ingredients

  • 600 g boiling potatoes
  • 1 onion
  • 2 tbsp olive oil
  • 8 eggs
  • 100 ml milk
  • 100 ml heavy cream (at least 30% fat)
  • Salt
  • ground pepper
  • 2 tbsp freshly chopped parsley

    Peel, wash and cut the potatoes into 0.5 cm cubes. Peel and finely chop the onion. Fry the potato cubes in hot oil, stir, after 5 minutes add the onions and cook for another 5 minutes.

    Whisk the eggs with milk and cream, season with salt and pepper, then fold in parsley. Pour the egg mixture over the potatoes and let it set on low heat until the underside is lightly browned. Flip the tortilla using a lid, slide it back into the pan, cover and cook for about 6-10 minutes.

    Remove from the pan, cut into portions and serve with sherry.
