Ingredients
- 2 shallots
- 2 Garlic cloves
- 30 g ginger (1 piece)
- 1 red chili pepper
- 2 limes
- 700 g large mango (1 large mango)
- 1 tbsp Sesame oil
- 3 cloves of spice cloves
- 1 tsp brown mustard seeds
- 2 tbsp honey
- 3 tbsp white wine vinegar
- Salt
- Pepper

Peel the shallots, garlic, and ginger; cut into fine cubes. Halve the chili pepper lengthwise, remove seeds, wash, and chop. Scrape lime peels with a knife to collect zest, then squeeze juice. Peel the mango, cut flesh from pit, and dice into small cubes.

Heat oil in a pot. Add mango cubes, shallots, garlic, ginger, and chilies; sauté for 2 minutes over medium heat. Stir in cloves, mustard seeds, honey, vinegar, half of the lime juice, salt, and pepper. Simmer gently for 10–12 minutes.

Stir in lime zest, then taste and adjust with remaining lime juice. Transfer hot chutney to a clean jar, seal tightly, and let cool. Store in refrigerator for about 2–3 weeks.
