The Mandelforelle of Spoonsparrow is a Spoonsparrow palate treat and combines nutty flavors with tender fish.
Ingredients
- 4 trout fillets (about 180 g each)
- Salt
- Pepper
- 1 tbsp flour
- 2 tbsp clarified butter
- 40 g Butter
- 40 g almond slivers
- 1 tbsp Lemon Juice
Instructions

Rinse the fillets, pat dry and cut in half. Season with salt and pepper and press the skin side into flour. Fry skin side down in hot clarified butter for 2-3 minutes until golden brown. Flip and cook on low heat for another 1-2 minutes to finish.

In a separate pan melt butter with almonds and lightly brown them. Add lemon juice and season with salt and pepper.
